Production area
Acate, in the province of Ragusa. This grape prefers terrain that is typically sandy and sloping, and with lots of sunlight. The type of farming is “Espalier”, used with an average density of planting where there are 4500 plants per 2.5 Acres.

Pinot Grigio. The sustainably
grown Pinot Grigio is harvested in the middle of August, at night, to preserve
the natural acidity and freshness of the grapes and avoid the extraction of
colour from the skin. An extremely soft pressing is also performed to avoid
extraction of colour. After natural decanting, the fermentation occurs in
stainless steel tanks at a controlled temperature of 16 °C for ten days. The
wine is fined on its lees for over five months.

Hints of fresh fruit such as white peach and pear mix with hints of flowers
like chamomile.
Flavour: Average acidity, pleasant creaminess,
pleasurable minerality and freshness.

Pairs
well with antipasto of raw fish, sushi, and shellfish. Versatile at the table,
excellent with most kinds of fried food.
