Bouquet: intriguing notes of ripe red fruits, such as currants and morello cherries, along with spicy notes, and a touch of almond and vanilla coming from the long aging in wood.
Flavour: the balance between the delicate structure of Nero d'Avola and the rich juiciness of Pinot Noir is enticing.
Vinification
The vineyards selected for this wine are in the eastern area of Sicily with a perfect exposure to sunlight and sea breezes. They thrive on medium- textured, limestone, loose soils, that are rich in iron; this favors the full polyphenolic maturation of the grapes and the development of a very distinctive aromatic profile.
Pinot Noir grapes are harvested at the beginning of September, vinified and fermented at controlled temperatures of 18-20°C or 8-10 days and later aged in French oak for several months.
The Nero d’Avola grapes are harvested around the middle of September, vinified and fermented at controlled temperatures of 22- 24°C for 10-12 days to preserve the full richness and fragrance of the grapes, abstracting only their soft and noble part (colour and primary aromas). Nero d’Avola is then aged in steel for several months.
