Colour: Ruby red with garnet reflections.
Bouquet: Ample and intense, featuring fragrant aromas of ripe red fruit like cherries, raspberries, and blackberries with nuances of red berry jam enveloped with spicy notes derived from skilled aging in oak.
Flavour: a medium bodied wine that expresses overall softness and silky tannins.
Pairings: it pairs well with spicy cold cuts, vegetable soups, grilled meats, roasts, boiled meats, and mildly aged cheeses. Its delicate structure and fragrant fruity character make of this Merlot an ideal companion to dishes that would ordinarily not be easily paired, such as timbale or tagliolini pasta with artichokes.
Vinification
This varietal is harvested towards the middle of September from grapes with ideal phenolic and aromatic maturity. De-stemming and alcoholic fermentation with the skins is carried out at 26°C for some days. Malolactic fermentation is followed by ageing in French barriques that are at least two years old.
